There really is no denying my love for 2 things: 1) Mexican flavors and 2) cheese. Today, I bring you both. I’ve been looking for new and interesting sides/appetizers to bring to summer parties and while I absolutely love my usual taco dip, it was time to try something new. These egg rolls are super quick and easy to put together and since they’re baked, there is less guilt in eating them. And who doesn’t love a good dipping sauce? Today I’m teaming up with Mrs. Renfro’s to bring you the sauces. I dipped with their Chipotle Nacho Cheese Sauce and their Roasted Garlic Salsa. And today, Mrs. Renfro’s is offering up 1 lucky reader a chance to try the sauces I used.
Start by preheating your oven to 425Â°. Spray a baking sheet with cooking spray and set to the side.
In a large bowl combine the black beans, corn, red pepper, green onion and green chiles. Stir in the fresh cilantro, cumin and salt. You can adjust any of these seasonings to your liking.
On a flat work surface lay out the first egg roll wrapper and spoon 1 tablespoon of the bean mixture into the center. Fold one half of the wrapper over the mixture, fold in the sides and continue to roll the egg roll. Use a little water on the corner to seal the wrapper. Place the egg roll seam side down on the baking sheet. Repeat with the remaining wrappers and mixture.
Bake the rolls for 20 minutes, turning the egg rolls halfway through the baking process. They should turn brown and bubbly. Serve the egg rolls with a side of nacho cheese and salsa.
